Food, Friends, and Fun in the Sun Memorial Weekend!

My weekend was quite eventful. I absolutely love going on vacation. However, my DH seems to put a dampener on my mood. He is mister cranky pants...every time. Love you hubby if you are reading this :)...
pants.

Once we get to our destination, he mellows out a bit...but he is still bitchy. Therefore, I was in a bad mood. Sometimes I dread going on vacation b/c of that. I wish we would mellow out and relax more. He needs a good smack on the head :). Vacation should not be stressful! Anyway, our vacation was good. It was good to see everyone! Our daughter had a blast. She did not sleep well. Therefore, we didn't sleep well. Waking up 6:30 am is a bitch! We had one melt down, but that was it. She just wanted to keep on going, but couldn't take it anymore...On top of that, she came down with a cold! So, I don't blame her.

The ride home was quite eventful. Hubby ended up having a headache, so I offered to drive. The headache could have contributed Mr. Cranky Pants, but I am good at ignoring his moods :). Mika was awesome. The DVD player was set up and she was good to go...Thank God! As I was driving, I thought I saw this...

As I was driving, I kept on looking to my left to see if it was a tornado or just my imagination...It was definitely my imagination, but the weather was shty! Once we arrived, I had to go to choir rehearsal (Sweet Adelines). I was debating on having a drink before rehearsing, but didn't lol. So, all I have to say is...Home Sweet Home! Here are a few picts. from the fabulous Memorial Weekend Festivities...and a recipe my wonderful SIL made for breakfast...SOOOO YUMMY!!

BREAKFAST CASSEROLE

Ingredients
5 green onions, chopped, divided
1 tomato, chopped, divided
12 slices OSCAR MAYER Bacon
1 cup sliced fresh mushrooms
12 eggs
1/3 cup BREAKSTONE'S Reduced Fat Sour Cream
1 cup KRAFT Shredded Cheddar Cheese
1 cup KRAFT Shredded Mozzarella Cheese
Directions
1.Heat oven to 325 degrees F.
2.Reserve 2 tablespoons each onions and tomatoes. Cook bacon in large skillet until crisp. Remove bacon with slotted spoon to paper towels; reserve 1 tablespoon drippings in skillet. Add mushrooms to skillet; cook and stir 2 minutes or until tender. Remove from heat. Chop bacon. Add to skillet with onions and tomatoes; mix well.
3.Beat eggs and sour cream with whisk until well blended. Pour into greased 13x9-inch baking dish; top with bacon mixture and cheeses.
4.Bake 30 minutes or until center is set. Sprinkle with reserved onions and tomatoes. Let stand 5 minutes before cutting to serve.
